POKOTABI / Kobushi Ramen
拳ラーメン
At Kobushi Ramen in Shimogyo Ward, Kyoto, bowls anchored by Kyoto duck and dried nodoguro dashi are complemented by deluxe meat toppings, nori rice, and seasoned tamago kake gohan.
01 / ABOUT THE PLACE
The broth brings together the rich savour of Kyoto duck and the deep, concentrated depth of dried nodoguro (blackthroat seaperch), creating a clean-looking soup with remarkable staying power. Served near Umekoji-Kyotonishi Station, Kobushi Ramen's signature duck and nodoguro soba uses smooth, straight thin noodles that carry the dashi cleanly with every mouthful. A touch of citrus or yuzu added partway through releases a bright aroma, shifting the broth's contours and keeping it compelling right down to the final spoonful.
Diners who want a generous spread of toppings can turn to the deluxe "Tokujo" bowl. Tender roast duck is served alongside yuan miso-marinated pork loin, hojicha-smoked hanging pork belly, pork shoulder loin, spiced chicken, seasoned soft-boiled egg, and delicate wontons filled with aged Kurobuta pork or citrus-scented shrimp. Comparing the contrasting textures and subtle smokiness across the cuts makes an unhurried match for a small bottle of beer.
Side rice dishes are similarly designed with the broth in mind. One can spoon leftover soup over fragrant nori rice, or add an order of dashi-infused tamago kake gohan (raw egg over rice) or Kyoto-style Kujo green onion rice for a heartier meal. A plant-based Rausu kelp soba served with rice offers another appealing path, giving the clear, clean sweetness of kombu broth center stage.
Orders are placed using the ticket vending machine by the entrance, with cash accepted. The dining room offers both counter and table seating, making it comfortable for solo visitors looking to enjoy patient, well-crafted dashi at lunch or dinner.
